Heat oven to 375 degrees. In a bowl, combine and mix: eggs, milk, 1 tsp salt and ½ tsp pepper.
Dice the onions and peppers and sauté for 5 minutes, until the onions are brown (6-7 minutes). Then add the spinach and stir it in as it wilts.
Combine the eggs and milk into a small bowl and mix together. Add some salt and pepper for taste. Next pour the mixture into the bowl, mixing in the vegetables so that they are not all on the bottom.
Add the cheese or any other greens, mixing it into the egg mixture.
Put in the oven and cook for 15 minutes or until top is brown. When you shake the pan, the eggs shouldn’t jiggle. Cool on a rack for about 10 minutes.
Cut into wedges and enjoy!

Feel free to add bacon or substitute any of the vegetables with what you have on hand.
